I’ve had my video doorbell live for a month now and still no snapshots. I’ve got it set to every hour, and nothing. The videos are fine.

As long as the Snapshot Capture feature has been enabled as described in this help center article, you should see these in your Ring app Event History Timeline. I have exactly the same problem as the OP.
Snapshots used to work but don’t any more - I get the occasional one, but it’s very random! I’ve tried everything in your guide but to no avail
