I have the exact same problem. Rolling the version back to 3.42.0 fixes it.
It’s been broken since 3.43.0 through 3.48.0
Try rolling back to version 3.42.0
Try rolling back to version 3.42.0
And disable auto updates in Google Play Store
It works now with version 3.49.

Almost a year later than your post. And I can confirm I also encounter this issue. I am using a Poco F3 with MIUI 13. So a newer version than you. But issue is present. I can confirm it is not my Ring doorbell or WiFi. As it works perfectly on the phone of my girlfriend (OnePlus 8T) and on my previous phone (OnePlus 7T) and using Microsoft Edge on my PC. Ring I hope you can solve this issue. In Live view every other second a stutter in audio… same on answering a Ring. Both sound, and microphone cuts off… In recorded video… audio from the person at the side of the Ring is perfect, but recorded sound from the microphone on my phone cuts out every other second. Therefor I cannot use my phone to anser Rings as the user outside my frontdoor cannot understand me.
I am running 3.54.1 on MIUI 13 (Poco F3) and the issue is still present.
