I would like the ability to configure long time storage where after the provided 60 days of online storage it would download automatically to a configured endpoint via FTP or some other means.

Ring does not provide that functionality. I suppose you could try and use an automation tool on your Mac or PC to login and attempt downloading. I suspect that would be quite complex, but never say never.
