Can anyone tell me where the settings is for night vision as I have looked under video settings. Mine stays colour at night

There currently is not an App setting to manually control or override this automatic switching. There is however on some Ring cameras there is a setting "Infrared Lights for Night Vision" setting. This setting only affects whether you want the camera's red-glowing IR LEDs to help illuminate the area when the camera automatically switches into Night Vision mode, for better video quality. It does not control the automatic switching between Daytime/Nighttime modes. It is useful if you have adverse IR glare reflections, or if you find too many bugs in your area are attracted to the dim-glowing IR LEDs. - Select Menu (the 3 horizontal-lines icon, upper-left-corner) \> Devices \> select your camera \> Device Settings (gear-shape Icon) \> Video Settings \> toggle "Infrared Lights for Night Vision". If you are seeing colour at night, most likely the surrounding illumination is high enough that your camera decided to remain in the Daytime mode, or something bright is shining into your camera's lens. Opinions vary among people and some people prefer the Daytime mode even during the night. They "trick" their cameras to remain in the Daytime vision mode by using bright sufficient surrounding light around their cameras. This can prevent the automatic switching to Night Vision Mode. If you prefer the Night Vision Mode at night, reduce or shut off the surrounding light from your camera that might be preventing the auto switching to night mode.
