I have one outdoor camera & two spotlight camera, and I’m very happy with the app and how the camera performs. However when there is a car passing by on the road (even if it’s slow) I cannot see the license plate or reconnize persons when I zoom in. Do I do something wrong with the setting or is this just the way it is. I have tried other camera brands where I can zoom in and can see all details

No. You've done nothing wrong. Ring state their cameras are 1080p, but they're just not as I have 1080p cameras that perform much better. Some of the Pro range are 2K, but even they are restricted to your available wifi bandwidth and unless you've got outdoor hardwired wifi extender its unlikely you'll get a decent image out of any Ring camera without stutter and judder. I am also disappointed with the image quality of Ring cameras, I guess we're just stuck with them. I found this on Youtube.
